π§ Ingredients
For Palak (Spinach)

3 cups fresh palak (spinach), washed

2 cups water

2 green chilies
For Chicken Gravy

½ kg chicken (bone-in or boneless)

3 tbsp oil or ghee
-
1 medium onion (finely chopped)

2 tomatoes (chopped)
-
1 tbsp ginger-garlic paste
-
1 tsp salt (or to taste)

1 tsp red chili powder
-
½ tsp turmeric powder
-
1 tsp coriander powder
-
½ tsp cumin powder
-
½ tsp garam masala
For Garnish
-
Fresh coriander
-
Ginger julienne
-
Green chili slices (optional)
π² Instructions
Step 1: Prepare the Palak

Boil spinach with water and green chilies for 3–4 minutes.

Drain and blend into a smooth paste. Set aside.
Step 2: Make the Chicken Base

Heat oil in a pan.

Add onions and fry until light golden.

Add ginger-garlic paste and sautΓ© for 1 minute.

Add tomatoes and cook until soft and oil separates.
Step 3: Add Chicken & Spices

Add chicken pieces and fry for 5–7 minutes.

Add salt, red chili powder, turmeric, coriander powder, and cumin powder.

Cook until chicken changes color and masala thickens.
Step 4: Add Palak

Add prepared spinach paste to the chicken.

Mix well and add ½ cup water if needed.

Cover and cook on low heat for 15–20 minutes until chicken is tender.
Step 5: Final Touch

Sprinkle garam masala.

Garnish with coriander, ginger, and green chilies.

Simmer for 2 minutes and turn off heat.
