For the Chicken

500g boneless chicken (small cubes)

3 tbsp oil or ghee

1 medium onion (finely chopped)

2 medium tomatoes (blended or chopped)

1 tbsp ginger garlic paste
Spices

1 tsp salt (adjust to taste)

1 tsp red chilli powder
-
½ tsp turmeric
-
1 tsp coriander powder
-
½ tsp garam masala
-
½ tsp crushed black pepper
Creamy Base
-
½ cup yogurt (whisked)
-
¼ cup fresh cream
-
1–2 green chillies (slit)
Garnish
-
Fresh coriander
-
A small cube of butter (optional but delicious!)
🍳 How to Make Chicken Handi (Step-By-Step)
Step 1 — Fry the Chicken

Heat oil/ghee in a handi or wok.

Add chicken and sauté until the color changes to white.
Step 2 — Add Onions & Tomatoes

Add chopped onions and fry until soft.

Add ginger garlic paste and cook for 1 minute.

Add tomatoes and cook until the oil separates.
Step 3 — Add Spices
Mix in:

red chilli

turmeric
-
coriander
-
salt
Cook for 2–3 minutes.
Step 4 — Add Yogurt & Cream

Add whisked yogurt and mix well.

Add the fresh cream and stir until smooth and creamy.

Add green chillies.
Step 5 — Final Touch
Simmer for 5 minutes on low flame.
Sprinkle garam masala, black pepper, fresh coriander, ginger slices, and butter.
