A healthy, colorful, and delicious mixed vegetable dish made with everyday sabzi and aromatic spices. Ready in just 25–30 minutes — perfect with roti or rice.
🧅 Ingredients
Vegetables

1 cup cauliflower (small florets)

1 cup potatoes (cubed)

1 cup carrots (sliced)
-
1 cup capsicum (sliced)
-
1 cup peas (fresh or frozen)

1 tomato (chopped)
-
1 onion (sliced)
Spices
-
½ tsp turmeric
-
1 tsp red chili powder
-
1 tsp coriander powder
-
½ tsp cumin powder
-
Salt (to taste)
-
½ tsp garam masala
-
¼ tsp black pepper
Other
-
3 tbsp oil
-
1 tbsp ginger-garlic paste
-
2 green chilies (slit)
-
Lemon (optional)
🍲 Instructions
1. Sauté the base

Heat oil in a pan.

Add sliced onions and cook until soft and light golden.

Add ginger-garlic paste and sauté for 1 minute.
2. Add potatoes & harder vegetables first

Add potatoes, carrots, and cauliflower.

Add salt, turmeric, red chili powder, coriander powder, and cumin powder.

Cook for 5–6 minutes, stirring occasionally.
3. Add softer vegetables
-
Add capsicum, peas, tomato, and green chilies.

Mix everything and cook on medium heat for 10 minutes.

Cover and cook until vegetables are soft but not mushy.
4. Final touch

Sprinkle garam masala and black pepper.

Add fresh coriander.

Squeeze lemon before serving (optional).
