For the Chicken

  • 500g boneless chicken (small cubes)

  • 3 tbsp oil or ghee

  • 1 medium onion (finely chopped)

  • 2 medium tomatoes (blended or chopped)

  • 1 tbsp ginger garlic paste

Spices

Creamy Base

  • ½ cup yogurt (whisked)

  • ¼ cup fresh cream

  • 1–2 green chillies (slit)

Garnish

  • Fresh coriander

  • Ginger julienne

  • A small cube of butter (optional but delicious!)


🍳 How to Make Chicken Handi (Step-By-Step)

Step 1 — Fry the Chicken

  1. Heat oil/ghee in a handi or wok.

  2. Add chicken and sauté until the color changes to white.

Step 2 — Add Onions & Tomatoes

  1. Add chopped onions and fry until soft.

  2. Add ginger garlic paste and cook for 1 minute.

  3. Add tomatoes and cook until the oil separates.

Step 3 — Add Spices

Mix in:

  • red chilli

  • turmeric

  • coriander

  • salt

Cook for 2–3 minutes.

Step 4 — Add Yogurt & Cream

  1. Add whisked yogurt and mix well.

  2. Add the fresh cream and stir until smooth and creamy.

  3. Add green chillies.

Step 5 — Final Touch

Simmer for 5 minutes on low flame.
Sprinkle garam masala, black pepper, fresh coriander, ginger slices, and butter.
