🥕 Gajar ka Halwa (Carrot Pudding) Recipe

Ingredients:

1 kg fresh carrots, peeled and grated

1 liter full cream milk
-
150–200 g sugar (adjust to taste)

100 g ghee (clarified butter)

10–12 cashews, chopped
-
10–12 almonds, sliced
-
8–10 raisins
-
4–5 green cardamom pods, powdered
-
A pinch of saffron (optional)
Instructions:

Grate the Carrots
Wash, peel, and grate the carrots finely. Set aside. -
Cook Carrots in Milk
In a heavy-bottomed pan, add the grated carrots and milk.
Cook on medium heat, stirring occasionally until the milk reduces and the carrots are soft (about 45–50 minutes). -
Add Sugar & Ghee
Once the milk has almost evaporated, add sugar and mix well.
Then add ghee and stir continuously until the mixture thickens and starts leaving the sides of the pan. -
Add Nuts & Flavors
Stir in chopped cashews, almonds, raisins, and cardamom powder. Mix thoroughly.
Cook for another 5–7 minutes until everything is well combined and fragrant. -
Optional Garnish
Sprinkle a few strands of saffron on top for a beautiful aroma and color. -
Serve
Serve warm, or refrigerate for later. Gajar ka Halwa can also be served with a scoop of vanilla ice cream for extra indulgence.
