🥕 Gajar ka Halwa (Carrot Pudding) Recipe

  1. Grate the Carrots
    Wash, peel, and grate the carrots finely. Set aside.

  2. Cook Carrots in Milk
    In a heavy-bottomed pan, add the grated carrots and milk.
    Cook on medium heat, stirring occasionally until the milk reduces and the carrots are soft (about 45–50 minutes).

  3. Add Sugar & Ghee
    Once the milk has almost evaporated, add sugar and mix well.
    Then add ghee and stir continuously until the mixture thickens and starts leaving the sides of the pan.

  4. Add Nuts & Flavors
    Stir in chopped cashews, almonds, raisins, and cardamom powder. Mix thoroughly.
    Cook for another 5–7 minutes until everything is well combined and fragrant.

  5. Optional Garnish
    Sprinkle a few strands of saffron on top for a beautiful aroma and color.

  6. Serve
    Serve warm, or refrigerate for later. Gajar ka Halwa can also be served with a scoop of vanilla ice cream for extra indulgence.
