Ingredients
For Chicken Masala
1 kg chicken
3 onions (sliced)
3 tomatoes (chopped)
1 cup yogurt
2 tbsp ginger garlic paste
3 tbsp biryani masala
1 tsp turmeric
1 tsp red chili powder
Salt to taste
½ cup oil
For Rice
3 cups basmati rice
2 bay leaves
4 cloves
2 cardamoms
1 cinnamon stick
Salt
For Layering
Fried onions
Fresh coriander
Fresh mint
Saffron milk or yellow food color
Instructions
Heat oil and fry onions until golden.
Add ginger garlic paste and cook for 1 minute.
Add chicken and cook until color changes.
Add tomatoes, spices, yogurt and cook until oil separates.
Boil rice with whole spices until 70% cooked.
Layer rice over chicken masala.
Add fried onions, mint, coriander and saffron milk.
Cover and cook on dum for 20 minutes.
Tips
Always use long grain basmati rice.
Cook biryani on low flame for dum.
