For Tarka (Tempering):

Cooking oil – 3 tbsp

Onion (sliced) – 1 medium

Garlic paste – 1 tbsp

Cumin seeds – 1 tsp

Fenugreek seeds (methi dana) – ½ tsp

Curry leaves – 8–10

Dried red chilies – 2

Step 1: Prepare Pakoras

In a bowl, mix besan, onion, green chilies, coriander, salt, red chili powder, and baking soda.

Add water gradually to make a thick batter.

Heat oil and drop small portions of batter into hot oil.

Fry until golden brown. Remove and set aside.

Step 2: Prepare Kari Base

Whisk yogurt, besan, turmeric, red chili powder, salt, and water until smooth.

Pour mixture into a pot and cook on medium heat, stirring continuously.

Bring to a gentle boil and cook for 15–20 minutes until thickened.

Step 3: Add Pakoras

Add fried pakoras to the kari and simmer for 5–7 minutes.

Step 4: Prepare Tarka

Heat oil in a pan.

Add cumin seeds, fenugreek seeds, dried red chilies, curry leaves, onion, and garlic paste.

Fry until onions turn golden and aromatic.

Step 5: Final Touch

Pour hot tarka over the kari. Cover for 2 minutes and serve hot.
