Authentic Pakistani Beef Nihari Recipe
A rich, slow-cooked, deeply spiced beef stew—Nihari is one of Pakistan’s most iconic breakfast dishes. Serve with hot naan, lemon, ginger, and fresh coriander.
⭐ Ingredients
For the Nihari
-
1 kg beef shank (nalli + bong pieces preferred)
-
1 cup oil or ghee
-
2 medium onions (finely sliced)
-
2 tbsp ginger garlic paste
-
2–3 tbsp wheat flour (atta), mixed with ½ cup water (to thicken)
-
10–12 cups water (adjust as needed)
-
Salt to taste
⭐ Nihari Masala (Homemade)
You can use store-bought Shan/National, but homemade tastes amazing.

1 tbsp Kashmiri red chili powder
-
1 tbsp red chili powder
-
1 tsp turmeric powder
-
1 tbsp coriander powder
-
1 tsp cumin powder
-
1 tsp fennel seeds powder (saunf)
-
½ tsp black pepper powder
-
½ tsp cinnamon powder
-
½ tsp cardamom powder
-
½ tsp cloves powder
-
½ tsp nutmeg powder
-
½ tsp mace powder
-
1 bay leaf
⭐ For Tarka
-
3 tbsp ghee
-
1 tsp Kashmiri red chili powder
⭐ Garnish
-
Julian-cut ginger
-
Fresh coriander
-
Lemon wedges
-
Chopped green chilies
π³ Instructions
1. Fry the Onions
-
Heat oil or ghee in a large pot.
-
Add sliced onions and fry until light golden.
-
Add ginger garlic paste and cook for 1–2 minutes.
2. Add the Meat
-
Add beef shank pieces.
-
Cook on medium-high heat for 7–10 minutes until the meat changes color.
3. Add Nihari Masala
-
Add all the spices listed above.
-
Cook until oil separates and masala becomes fragrant.
4. Add Water & Simmer
-
Add 10–12 cups water.
-
Bring to a boil.
-
Cover and simmer on low heat for 4–6 hours
(or pressure cook for 45–50 minutes). -
Beef should be very tender and gelatinous.
5. Thicken the Gravy
-
Mix atta (wheat flour) with ½ cup water to form a smooth slurry.
-
Slowly pour into the nihari while stirring continuously.
-
Cook for 15–20 minutes on low heat until gravy thickens.
6. Prepare the Chili Tarka
-
Heat 3 tbsp ghee in a small pan.
-
Add 1 tsp Kashmiri chili powder.
-
Pour over nihari just before serving.
